Cauliflower Fried "Rice"

This is TOO easy to NOT try.

and it's too YUMMY to not EAT!




What You Need: * I typically "eyeball" everything and added a bit more veggies to my mix!
3cups of grated raw cauliflower (use a cheese grater or food processor)
½cup frozen corn 
½cup carrots and pea medley (look for the frozen bag in your grocery store)
3-4garlic cloves, minced
½cup onion, diced
1tbTBSP olive oil
2eggs (or 4 egg whites) scrambled
3TBSP soy sauce


Directions:

  1. Dice up onion into small chunks, then sauté until soft.
  2. Mince garlic and add into the pan with the onion until garlic is golden brown
  3. Add peas, carrots, and corn into the pan and stir until dethawed and soft (cooked through completely).
  4. Add 3 eggs and scramble
  5. Add riced cauliflower into the pan and then add the 3tbsp of soy sauce.
  6. Stir for about 5-7 more minutes 
  7. Add any protein sources you like: tofu, chicken, shrimp, etc! 
  8. Let cool and Enjoy!
