"Hi, I'm Abby... my vice of choice is chocolate chip pancakes" BUT HEALTHY of course!
This recipe is so easy and FOUR ingredients, and they are probably in your fridge and cabinets RIGHT now. Who said that when you want to get in shape and be healthy that you had to sacrifice your tastebuds and favorite foods?
Ingredients:
3/4c of GREEK vanilla yogurt (I love the one posted in my picture, honey vanilla by Greek Gods)
*** The yogurt you choose is KEY to how it will taste, so don't be cheap!
1 egg white, or 1 egg
Mix those two together, smooth out the bumps as much as possible
1/2c of Wheat flour or buckwheat pancake mix
1tsp of baking soda
1tsp of cinnamon (optional)
Mix those together well, then combine with the wet ingredients, heat the griddle with coconut oil or olive oil (about 1tbsp). Makes about two medium sized cakes.
I did add chocolate chips and fresh strawberries on top! MMM.... enjoy!!!
